What even I should about this delicious dessert I made few days back for my husband’s friends for dinner, they really loved it…!! YEAH YEAH..:-)

Rasmalai is a popular Indian dessert  and it’s my favorite too. As a kid, I was not very fond of sweets or desserts rather than chocolate..hehe but I used to have Rasmalai everytime whenever I am served. I will be sharing with yo all the recipe of this rich and delicious dessert so you guys can even try making at home and enjoy the really delectable dessert.

Garlic and Herbs Infused Focaccia breadwith Cherry Tomatoes, Jalapeno and red bell pepper

Focaccia is a flat oven baked Italian  bread and it’s texture is similar to Pizza. You can have it s a side dish with any soup or as a sand-which  bread.

I wan to have a pizza as I write about this fabulous focaccia bread. I’ve been making this bread from a long time but nowadays kinda so occupied with my 1 year old that I hardly get time to bake or cook something special. So, the other day my husband wanted to eat some soup and bread for dinner. So first thing thing came to my mind was to bake some good focaccia bread.

Stuffed Mango Rabri

Mangoes what even more should I say? The king of fruits and my love for mangoes….Mangoes are in season and especially alphonso. In India my uncle used to send us boxes of alphonso mangoes from Bombay which taste amazing and the fragrance…Oh! boy what should I even say i still remember the fragrant of those mangoes. It gets difficult to get good alphonso here in US, this time I made sure to search beforehand from where I can get good alphonso mangoes. So finally I ordered boxes of mangoes and when the boxes arrived  I couldn’t resist myself from digging into them.

Paneer Tikka

As you guys know how obsessed I am with Panner (Indian Cottage Cheese). I just love paneer. Paneer Tikka is one of my family’s favorite snack to order whenever we go out to eat. They all love it so much and so does me…:-D

Panner Tikka is basically paneer cubes marinated in a yogurt based spicy mixture with onions and bell peppers than arranged on skewers and grill or bake in oven. Traditionally in restaurants they are made in tandoor but you can make it in oven or stove top.

Onion & Tomato Rava Uttapam.

Uttapam is a popular South Indian breakfast dish, it is traditionally made from rice and lentil(dal) batter which requires preparation like soaking the grains and grinding them, but this Rava uttapam is an instant one. It does not require much preparation. I like to prepare Rava uttapam for breakfast as it is a hassle free dish which prepares in no time and it is really a good and wholesome breakfast too. This recipe requires yogurt, sooji / Rava or semolina and vegetables of your choice, here I have used onion, tomato and coriander. You can use capsicum, spring onion, corn anything you have in your refrigerator.

Rabri

Rabri is a thickened milk based Indian dessert which is  very popular and it is loved by all. You guys must try this dessert and I am sure you will fall in love with it. When i was a kid I was not a fan of sweets especially sweets which are prepared from milk but only 1 sweet or dessert I used to eat was Rabri from the famous shop in my hometown jaipur, my dad used to get from me whenever I craved for some Rabri. Ohh..!! I miss those days and that Rabri from a local shop.

Taco’s

Taco Tuesday..!! Who doesn’t like tacos it is a simple and wholesome meal and easy to whip up for quick dinners. In my family everyone loves taco and me too. I like it on those days when you don’t have time for prepare a full and yeah it is nutritious and healthy too..!! Here i have made vegetarian refried bean taco, you can use any filling . of your choice be it cauliflower, meat anything you can make changes according to your taste. I have used store bought flour tortillas you can change them as per your preference or you can make tortillas at home.

Here are the list of ingredients and method of preparing tacos

Ingredients:

  • 2 flour tortillas
  • 1 cup refried beans (store bought) *
  • 1/2 cup chopped lettuce
  • 1/2 cup salsa
  • 1/2 cup chopped tomato and onion
  • 1/2 jalapeno
  • 1/2 cup cheese
  • 2-3 tablespoon sour cream

Method:

  1. Heat the tortillas on a griddle on both sides for 2-3 minutes
  2. spread the refried beans mixture on the tortilla
  3. Now put some salsa over the refried beans
  4. Now add tomatoes , jalapeno and onion
  5. Now add lettuce
  6. Next add cheese and
  7. Top it up with sour cream and just relish the goodness of yummy and healthy tacos.
  • I have store bought refried beans (vegetarian). If you guys want i can even share the recipe of refried beans.

Dahi vade or dahi bhalle

Dahi bhalle or dahi vade..!! This is north India’s one of the most popular dish in every household, everyone just loves it and so does me and my husband..😊

I made them few days back and trust me guys they were yum yum yum…the balls were sooo soft just melts in the mouth with the yogurt and other spices and chutneys ooh boy my mouth is watering while writing this post… 😄

Roasted tomato and red bell pepper soup

Heya!! Everyone hope you all had a wonderful weekend… I am posting after such a long gap was traveling than with my 1 year it has become so hectic, he needs mamma’s full attention..:-D so after so long I am sharing a simple and comfort food recipe that you all can in no time…for the first time I had this soup somewhere out not sure about the place though and I really liked it as it is different than regular creamy tomato soup. I also tried this recipe and here it is. I really liked the flavor of red bell pepper. Guys do try this recipe out for your family and please share your experience.

Gujiya

Guijiya are sweet flaky pastry filled with khoya and dry fruits stuffing. Khoya or mawa is a evaporated milk solids.It is a popular north Indian dessert which is made on almost all the festivals but it is a like mandate thing to me be made on Holi, a festival of colours. As recently we celebrated holi as it was a first holi for my little one.!! I made this authentic and traditional dessert because my husband loves it soo much, he can have all day without minding the calories…:-D
