Brownie Crinkle Cookies

Hi guys..!! You all must be wondering I am posting after such a long time.. I was so occupied with my little one that I had to take a break from working on my blog as he needed all the attention..But now I am back with a bang hehe…:-😜 and from now on you guys will see more recipes related to toddler friendly food.:-D

Other day at night, I was sitting and craving for some brownies and cookies..:-D and I have read about these cookies somewhere and note down the recipe and wanted to bake them from so long and finally I craved for them and baked these brownie crinkle cookies, they turn out so delicious, fudgy. I was so satisfied and felt content after taking the first bite of these cookies that I could not stop myself from eating one. My lil one liked them, it was a toddler approved too. I thought this will be the best recipe to post after such a long break for you all so you can enjoy these cookies as much as we enjoyed…so here is the sweet decadent recipe for you all. Do give it a try and let me know how it was for you.

Ingredients:

1 cup dark chocolate,
1/2cup unsalted butter, diced
2 tsp ground coffee
3/4 cup caster sugar
1/2 cup light brown sugar
2 large eggs
1 cup plain flour
3 tbsp cocoa powder
1 tsp baking powder

Instructions:

  1. Place the butter into a small saucepan and over medium heat cook until browned. Butter should be nutty brown.
  2. Immediately pour the butter into a bowl with the ground coffee. Now Set aside for 10 minutes.
  3. Now sieve the coffee and butter mixture.
  4. Now keep the bowl with the butter over a pan of simmering water.(just like double boiling method).
  5. Add the chocolate in the bowl and stir occasionally until fully melted.
  6. Remove the bowl from the heat and set aside for sometime.
  7. In the bowl of a stand mixer fitted with the whisk attachment, or you can hand mixer, whisk together the eggs and sugars for exactly 5-6 minutes, on medium/high speed.
  8. Once the eggs have been mixing for exactly 5 minutes pour in the chocolate mixture and mix for about 30 seconds to combine. 
  9. Add the dry ingredients to the bowl and mix very briefly just until combined. Use your spatula to give one last mix, scraping the bottom of the bowl to make sure everything is evenly combined. Don’t overmix here.
  10. Use a 2 tablespoon sized ice cream scoop to form the cookies. Make sure to leave plenty of space between each cookie as they will spread and bake for 8-9 minutes. The cookies will come out of the oven with that crinkled look and slightly domed.
  11. Allow the cookies to be cool on the baking trays for at-least 30 minutes before removing them from the tray to cool completely (as they will be very soft)
  12. Once cooled, enjoy the brownie crinkle cookies.!!

Kadhai Paneer

Kadhai Paneer is a mixture of Paneer(Indian CottageCheese) with mixed bell peppers and mixtures of spices. The main ingredients or spices in this curry which makes it so flavorful is roasted and freshly grounded coriander seeds and red chilliies. It is good dish to prepare when you have guests coming over. You can have it with some naans, roti or any kind of flat bread.

Ricotta Cheese Instant Peda

Pedas are Indian dessert traditionally made with mawa with different flavorings like cardamom, saffron and others. The process of making pedas from mawa is a long process and time consuming, so here I have made these Pedas with ricotta cheese, milk powder and sugar and the for the flavoring I have used cardamom and few strands of saffron and garnish them with almonds.

Dabeli

Dabeli is a famous snack of Northern part of India. Dabeli is basicallly a sandwich where filling is of potato mixture with different chutneys and peanuts. I really like Dabeli still have memories and taste of Dabeli which I used to have in Mumbai it was soo delicious..Oh boy I miss those days.

I prepared this Dabeli for my friends few of them never had Dabeli and they really liked it. It is good snack for a gatherings and when you have to feed many mouths.

WholeWheat Sandwich Bread

What can be good than a homemade bread..Yes you heard it right wholewheat homemade bread. I tried so many recipes of whole wheat bread but somehow the texture was dense and we didn’t liked that much. After trying so many recipes of wholewheat bread by far this was the one we liked. This bread was light, has a very nice flavor. It is good for making sandwiches, toasts whichever way you like..! So without much delay let me share the recipe with you guys. Will experiments some more bread recipes and will share with you guys..

Pav (Dinner rolls)

What can be more good than homemade bread. 🙂 Pav are  very popular in Maharashtra. It is very soft bread which is served with many dishes like pav bhaji, dabeli, Missal pao and they are really easy to make.! My family enjoys the most these pav with Pav bhaji a blend of vegetables. I will share the recipe with you guys, so do try them out.

Ingredients:

  • Milk – 100ml
  • Yeast – 1 Tsp
  • Sugar – ½ Tbsp
  • Maida / Plain Flour – 125g / 1 Cup
  • Salt – ½ Tsp
  • Milk Powder – 1 Tbsp / 9gms
  • Butter – 10 gms / 2 tsps
  • Milk & Butter – For Brushing

Instructions:

  1. To the warm milk, add the sugar and the yeast. Stir and keep aside to proof for 10 mins.
  2. In your working platform place the flour, salt and the milk powder. Mix and make a well in center.
  3. Add the proofed yeast mixture, which would have been frothy so far. Get your hands in and form this into a soft-pasty kind of dough. If the mixture does not turn out to be soft and sticky consistency, add more milk to it and make it sticky and soft.
  4. Add in the butter and start kneading it. Knead this by pushing the dough with heel of your palm.. This is going to be very sticky and kind of paste like, but this is how it is supposed to be. Just keep kneading and scraping once in a while for 15 minutes.
  5. After about 15 mins of kneading, this will come together and would be more like a dough than a sticky pasty mass.
  6. Place this into a bowl with a lil bit of oil, coat the dough and the bowl with the oil, cover with a damp cloth and let it proof for 1 hour or until doubled in a warm spot.
  7. Once doubled in volume, punch and take the dough out, sprinkle a bit of flour and knead for a minute.
  8. Divide the dough into 6 equal portions. My dough weighed 245 grams. And I portioned about 40gms each.
  9. Smooth-en out each portion by rolling them between your palm and fingers. Place the shaped portions in a 6″ square cake tin. You can make in a round one as well.
  10. Cover the cake tin with a cloth and let the pavs proof for another hour or until well risen.
  11. Preheat the oven to 400 F.
  12. Now bake them in a preheated oven for 12- 15 minutes, check after 12 minutes if lightly brown than broil it for few seconds monitoring closely.
  13. Take them out once they’re baked well.. Brush the tops with butter. Now take a damp cloth and cover the tin for a minimum of 30 minutes.
  14. Using a knife, loosen the sides and carefully take the pavs out..
  15. Fresh homemade Pavs are ready to enjoy..!!

Mango Mastani

Mango season is here guys..!! Mangoes the king of fruits and my love ..hehe:-D my lil one too loves mangoes. Had some mangoes on hands and wanted to try this recipe Mango Mastani heard a lot about it so i too tried this delicious yummy mango mastani and guys believe me it was like heaven. It is very simple to make with few ingredients . This recipe has lot of versions everyone makes it in their own style. I have made it the way I like it. Here are the list of ingredients:-

Ingredients:

  • 2 chopped Mangoes (save some for adding later)
  • 1 cup vanilla Ice cream
  • sugar to taste
  • 1 cup milk
  • almonds chopped for garnishing
  • pistachios chopped for garnishing
  • tutti frutti for garnishing

Instructions:

  1. Take a blender jar, add chopped mangoes, sugar and blend it to a thick puree
  2. Now add 1/2 cup vanilla ice cream and milk and blend it together in a thick milk shake consistency.
  3. Now pour the shake in glasses add chopped mangoes which you have saved top it with vanilla icecream, and garnish it with almonds, pistachios and tutti frutti.

Enjoy this delicious and yummy summer treat. !!

Chocolate Brownies

Heya Everyone.. Hope you all doing good.. Sorry was posting after so many days, my lil one had fractured so kinda occupied with him. Poor baby..:-( but he will better soon..So after all the sadness that he got hurt and all i thought to make something sweet to make us feel better and first thing came to my mind was Brownies….chocolaty , gooey,  fudgy brownies… These brownies were so delicious that even I don’t want to accompany ice cream with it , I can eat directly from the box. My lil one tried for the first time these yummy brownies and he loved it too…:-) Gosh!! I was so happy he liked it too just like his mom..haha
