Onion & Tomato Rava Uttapam.

Uttapam is a popular South Indian breakfast dish, it is traditionally made from rice and lentil(dal) batter which requires preparation like soaking the grains and grinding them, but this Rava uttapam is an instant one. It does not require much preparation. I like to prepare Rava uttapam for breakfast as it is a hassle free dish which prepares in no time and it is really a good and wholesome breakfast too. This recipe requires yogurt, sooji / Rava or semolina and vegetables of your choice, here I have used onion, tomato and coriander. You can use capsicum, spring onion, corn anything you have in your refrigerator.

Here I have served it with sambhar and mint and coriander chutney, you can serve it with coconut chutney or any other chutney of your choice.

Ingredients:

  • 1 cup Sooji (rava or semolina)
  • Salt to taste
  • ¼ teaspoon black pepper powder
  • 2 teaspoons Ginger paste or freshly grated or crushed
  • ¾ to 1 cup Chopped, tomato and onion
  • 1 small Green chilies chopped finely
  • 2 tablespoons Cilantro or coriander leaves finely chopped
  • ½ cup yogurt
  • 1 cup water
  • Oil for frying uttapams

Instructions for making batter:

  • Take sooji in a bowl. Add salt, pepper and grated ginger. Stir well.
  • Add yogurt. Mix well and it will be like a thick paste.
  • Add water. Stir till you get the smooth batter.
  • Cover it and let it rest for 15-20 minutes.
  • Meanwhile let’s prepare the vegetable mixture.
  • Take all the chopped vegetables along with green chilies and coriander leaves in a bowl. Mix well and keep it aside till needed.
  • After the resting time, check the consistency of the batter. If needed add little water and adjust thick yet runny consistency batter.

Instructions for making Uttapams

  • At the time of making sooji uttapam, Heat the cast iron tawa or non-stick pan on medium heat.
  • If your tawa is pre seasoned then no need to drizzle oil. But if using non stick pan then drizzle a teaspoon of oil into hot pan.
  • Take ladleful of batter and pour onto the tawa. Let it flow itself. Keep it medium thick.
  • Now sprinkle the veggies on top.
  • Drizzle the oil on top and around the edges and let it cook on MEDIUM-LOW till bottom side is cooked and light brown in color.
  • Once cooked flip and cook the other side similarly.
  • Once done remove it from the pan.
  • Repeat the same for rest.
